Easy Elote Salad
A quick take on Mexican street corn, with charred corn kernels tossed in a creamy, tangy, cheesy dressing.
Ingredients

4 cupcorn kernels , thawed if frozen

0.333 cupmayonnaise

0.333 cupcotija cheese , crumbled

2lime , juiced

1 tspchili powder

0.5 tspcayenne pepper (optional)

salt , to taste

Heat a dry skillet over high heat.

Add corn to the skillet without stirring; let it char.

Stir the corn and let it char further.

Transfer the corn to a bowl and let it cool.

Mix in the mayonnaise, cotija cheese, lime juice, chili powder, cayenne, and salt.
