Lemon Herb Garlic Marinade
A bright, herbaceous marinade of lemon, garlic, and fresh herbs that infuses chicken thighs with fresh, zesty flavor and a hint of sweetness.
Ingredients

1lemon , juiced and zested

3 clovegarlic , minced

2 tbspolive oil

1 tsphoney (optional)

1 tspdried oregano , or thyme, dried

1 tspfresh rosemary , finely chopped

salt , to taste

black pepper , to taste

chicken thighs , as needed for marinating
Instructions

Combine lemon juice, lemon zest, garlic, olive oil, honey, oregano or thyme, rosemary, salt, and pepper in a bowl or zip-top bag.

Add chicken thighs and toss to coat thoroughly.

Marinate in the fridge for 30 minutes to 2 hours, or up to overnight if prepping ahead.

Cook the thighs using your preferred method—grill, sear and bake, or pan-fry—until golden and cooked through to an internal temperature of 165°F.
