Pork Sirloin Roast
A juicy, herb-buttered pork sirloin roast seared in cast iron and finished in the oven, served with a simple pan gravy.
Ingredients

2 lbpork sirloin roast , tied

1 tbspavocado oil

2 tbspbutter

2 clovegarlic , minced

1 tbspfresh rosemary , chopped

0.5 tspblack pepper

1 cupchicken broth , low sodium

1 tbspcornstarch , mixed with water until smooth

Preheat the oven to 325°F.

Place a large cast iron skillet over high heat.

When the pan is hot but not smoking, add the avocado oil and swirl to coat the bottom.

Sear the pork roast on both sides until golden brown, about 3-5 minutes per side.

While the roast sears, mash together the butter, garlic, rosemary, sea salt, and pepper in a small bowl.

Turn off the heat and spread the garlic herb butter evenly over the top and down the sides of the roast.

Pour the chicken broth into the bottom of the skillet.

Place the skillet in the oven and cook until the roast reaches 145°F internal temperature.

Remove the skillet from the oven and transfer the roast to a plate; cover and let rest.

Mix the cornstarch with water until smooth.

Place the skillet over medium-high heat and drizzle in the cornstarch mixture, stirring constantly, until the juices thicken to your liking.

Add more chicken broth if desired to make more gravy, and season with salt and pepper to taste.

Slice the pork roast into 1/2-1 inch pieces and serve with the gravy and desired side dishes.
